The work of third–year BFA student TALYA JOHNSON will be on display and for sale during the dinner.
This 4-course meal prepared by local Chef Max Germano highlights seasonal Pacific Northwest ingredients. Each course, presented by the Chef, will include a wine pairing (listed below) curated by winemaker Alex Fullerton.
Bread and Butter
Roasted Fennel Salad, Fava Beans, Castelveltrano Olives, Chardonnay and Preserved Lemon Vinaigrette, Radish, Fresh Herbs, Lux Reduction. Paired with 2016 Lux Chardonnay.
Fir Crest Glazed Salmon, Sunchoke Puree, Swiss Chard, Crispy Pancetta, Charred Scallion Salsa Verde. Paired with 2016 Fir Crest Vineyard Pinot Noir.
Duck breast, Momtazi Bordelaise, Duck Fat Frittes, Gremolata. Paired with 2015 Momtazi Vineyard Pinot Noir.
Warm Rhubarb and Pinot Gris Tart, Almond Crumble, Browned Butter Semi Freddo. Paired with 2018 Three Otters Pinot Gris.
